  • What is braising?

    Braising (from the French word braiser) is a combination-cooking method that uses both wet and dry heats: typically, the food is first browned at a high temperature, then simmered in a covered pot in cooking liquid.

    Braising relies on heat, time, and moisture to break down the tough connective tissue (collagen) that binds together the muscle fibers in meat, resulting in a very tender product.

  • Do we only serve meats?

    No!

    Here at Braised, we want to extol the virtues of slow cooking to everyone, so we employ these same techniques with non-meat ingredients as well.

    Our signature Stewed Shrooms are a delicious example of this, as well as our occasional vegetable-based specials!

  • Do we have any gluten free options?

    Absolutely! As of January 1st, 2024 we are 100% gluten-free on our cart!

  • Where are we located?

    We are currently stationary at the Cedar Tree Food Pod at 1591 West 6th Ave. in beautiful Eugene, Oregon!

  • Do we move around, and are we available for events?

    At this time and for the foreseeable future, we are in a stationary location and are unable to move the cart conveniently.

    As we settle in and continue to grow, we will be looking for more mobile expansion opportunities. So stay tuned!

  • Can we call in orders for pick-up?

    We currently suggest that guests utilize our online ordering system to place orders ahead of time, as we aren’t always able to answer the phone in a timely manner.

  • What is Demi?

    Demi is a rich and delectable gravy we make from our signature Braised Beef’s braising liquid, red wine (don’t worry, there is no alcohol in the final product), and a gluten free roux!
